I really love this dessert. It is nice and easy and you can use any seasonal fruit or raisins soaked in armagnac for t least 2 hours, which is a great wintery dessert. If you want to make this even more decadent, you can serve some vanilla ice-cream with it. This will melt on top of the hot clafoutis and turn into a delicious mess…

(makes 3)

70g plain flour
2 eggs
25g golden caster sugar 100ml milk
80ml double cream
1 vanilla pod
400g blackberries
Pinch of salt

  1. Preheat the oven to 200C
  2. Scrape the seeds out of the vanilla pod and place both into a pan with themilk and cream and bring to boil
  3. Turn off immediately
  4. Remove the pod and leave to cool
  5. Combine the flour, salt, eggs, milk and the sugar in a bowl and mix with aballoon whisk until you get smooth batter
  6. Pour into a pretty baking dishes and scatter the blackberries over and bakeuntil golden brown (15- 20 minutes) without opening the oven
