This is a vegan and raw recipe. It is delicious and very light.

You will need:

Thinly sliced beetroot of various colours



Olive oil

For the cheese:

150g macadamia nuts (SOAKED in water overnight)

50ml water

1/2 teaspoon of chopped thyme

1 teaspoon of lemon zest

1/2 teaspoon of salt

1 teaspoon of chopped chives


For the blinis:

Marinade the beetroot in the oil, vinegar and honey (3:2:1 ratio) for a minimum of 30 minutes

For the cheese:

Drain the nuts and pop them into a high speed blender and blend with the remaining ingredients

Top the blinis with the cheese and serve.
