Next Monday is being labelled ‘Blue Monday’, the most depressing day of the year. Cheer yourself up with some comforting food without having to worry about breaking any New Years resolutions.
We have a fantastic menu for you starting with a delicious ‘pick me up’ juice.
For the juice:
1cm of fresh ginger
Handful of white or red grapes
Put the fruit through a juicer and enjoy immediately.
For lunch, we have put together a bright and sunny salad you can take to work and enjoy right at your office desk.
Turmeric chicken salad
1 chicken breast, finely sliced
Few pinches of turmeric
Fresh Thai chilli
Handful of cashew nuts
Couple of tablespoons of pomegranate seeds
Fresh mango wedges
For the dressing – combine 3 tablespoons of olive oil, 1 tablespoon of cider vinegar, dash of pomegranate molasses (optional) and salt and pepper to taste
Pour a dash of olive oil into a pan and fry the chicken with a large pinch of salt and the turmeric until the chicken is cooked, leave to cool
Combine with the other ingredients and pour the dressing over
For an evening Meal, choose from the following dishes
and finish the day off with some Caramel Pop corn and a good movie!
