This dish sounds extremely decadent, but is actually not unhealthy at all – it’s vegan, sugar free and full of goodness!

You need (serves 4)

For the ice cream

3 frozen bananas

150g frozen cherries

1tsp vanilla extract

1 tablespoons maple syrup

2 tablespoons of cocoa powder

1 tsp Maca powder (optional)

Blend all the above – add water if the mixture is not getting smooth

For the sauce: combine 1 teaspoon of crunchy peanut butter with 2 tablespoons of maple syrup

We served the ice cream topped with the sauce, goji berries, cocoa nibs and pistachios
