This is a deceptively simple dish, but a real hit with guests. Whether you are planning a special evening for 2 or a larger dinner party – this dish is the ultimate end to a luxurious meal.

Serves 2

You will need

Chocolate ganache:
150ml double cream
100g dark chocolate
Blackberry sauce and center:
150g blackberries
Edible gold spray
Edible gold leaf
Edible flowers
6 blackberries

For the blackberry sauce:
Simply blend the blackberries and push through a sieve to get rid of the seeds
Pour a few spoonfuls into a couple of ice cube trays and freeze until set (1 hour)
Reserve the rest as a sauce for the plate

For the ganache:
Pour the chocolate and cream into a bowl and melt in a bain marie
Once it’s completely incorporated, leave to cool at room temperature, then fill a half sphere silicone mould and freeze for 30 minutes
Remove the frozen blackberry cubes and place in the center and pour the rest of the ganache on top
Freeze for another 30 minutes until set (this will also make it easier to remove)

Decorate your plate
Remove the domes from the moulds and keep on a board to come up to room temperature for at least 30 minutes (until softened)
Decorate your plates and spray the domes with edible gold spray
Transfer onto the plates and serve
