We recently visited Dartmouth and did a cookery demo – ‘1 fish 3 ways’. These dishes are easy to make and full of flavour. You can use any fleshy white fish, such as tilapia or monkfish. 

Monkfish Curry

You will need:

400g coconut milk
1-2 tablespoons  of Thai green curry paste (make your own)
Handful of sliced veggies, such as small corn, sugar snap peas, button mushrooms
Large handful of bean sprouts
1 large monkfish fillet, cut into large chunks

Heat up the paste in a pan until the aroma is released (couple of minutes)
Add the milk and stir to combine
Poach the fish in the mixture for 5 minutes (or until cooked through)
Add the vegetables for the last minute of cooking, just to heat them
through,  adding the beansprouts just before serving
A little sprinkle of fresh coriander will finish the dish off!
