The weather has turned quite cold and wet on us. Slow cooking is a great way to cheer yourself up- it is easy, the whole house smells delicious and you are a hero for feeding your whole family. If you decide to brave the wether this weekend and go for a walk, coming home to some pulled pork is a treat.

 

1kg Pork shoulder

50g soft light brown sugar

4 tbsp smoked paprika

3 tbsp salt

1 tbsp cayenne pepper

1 tbsp ground cumin

1 tbsp ground coriander

1 tbsp dry mustard powder

2 tsp dried marjoram

 

Mix all the spices and herbs in  bowl

Score the meat and rub all over with spice mix

Leave at room temperature for 30 minutes

Preheat the oven to 150C

Pop the pork in a roasting tin, pour a small glass of water in the tray, cover tightly with baking foil

Put the pork in the oven and cook for 5 hours

When the pork is cooked, transfer to a board, cover with a sheet of foil and leave to stand for 15 minutes. Pull into shreds with a couple of forks

Enjoy in a tortilla, on top of a burger or a hot dog!
