We have decided to start a new tradition and post a recipe for you to try over the weekend on our blog every Friday. If you have any suggestions on what we should include next week, let us know.

The first recipe to kick off this new venture is an omelette.

We ran our first class of 2013 (photo below) last night. Eight lovely people learned how to make their own delicious cheese. This meant that our fridge was full of fresh cheese and so here you go – cottage cheese omelette:

You will need:

3 eggs

1 tablespoon of water

Pinch of salt (we used garlic Cornish sea salt)

2 tablespoons of home made pesto

A few basil leaves, torn

1 finely chopped tomato

3 tablespoons of cottage cheese

Preheat the oven to 180C

Chop the tomatoes and fry in a large glug of oil in a small pan

Whisk the eggs with the salt and pesto

Add them to the hot pan and leave to set for 1 minute

Start pushing  the sides of the omelette 1 inch towards the centre with a spatula

When the omelette is starting to set on the sides, but is still quite wet on the top, scatter with the cottage cheese and pop into the oven for a couple of minutes until the omelette is set

Scatter with the basil leaves

Slide onto a plate and serve immediately
