There is nothing more delicious than a home made pesto. The smell of fresh basil is almost intoxicating and it is also very good for you. The pine nuts and olive oil give it almost moorish decadence. Combine this with fresh pasta or simply serve on top of creamy mozzarella and plump tomatoes as a starter and you feel like you are far away from the hustle and bustle of a wet and cold city and a hectic life style.

To make your own pesto:

Combine 2 sprigs of basil, a handful of pine nuts and grated parmesan in a blender and pulse whilst pouring in 100ml olive oil

Season with salt and lemon juice to taste.

You can keep this for a couple of weeks in the fridge. Make sure that you pop it into a air tight container and make sure that the pesto has a generous film of olive oil on top to preserve it.
