Sweet muffins are an absolute treat, but I am also fond of the savoury ones. On most days, I prefer them for breakfast. This is a simple recipe and the vegetables we use are just suggestions. It is a great way to use up any leftovers.

This makes about 10

You need:
225g Self Raising flour
100g Feta cheese, crumbled
175ml Whole milk
1 egg
55ml vegetable oil
100g grated courgette and kohlrabi
50g cooked bacon lardons
50g roasted tomatoes and sweetcorn
1 tsp salt and a large pinch of freshly ground pepper

Preheat the oven to 180C
Line a muffin tray with muffin cases
Combine all the ingredients and pop into the cases
Bake for 15 minutes until the top is golden brown and cooked all the way through (if you insert a skewer, it should emerge clean)
Leave to cool and enjoy
