This is a delicious and versatile dish – equally suitable as a light lunch or an exciting starter for a dinner party. It is simple enough to be made first thing in the morning (or just before bed) and will keep in the fridge until you’re ready to make your workmates jealous at lunchtime. Possibly the best thing about the frittata is its flexibility – you can swap out ingredients to make your own version, or just depending on what’s available.

1/2 red onion, finely chopped
2 garlic cloves, finely sliced
Large pinch of salt
1 tbsp garam masala
1 tsp smoked paprika
1 grated courgette
6 eggs
150g shredded ham hock
Chopped bunch of chives
5 teaspoons of Mascarpone
Pepper

Preheat your oven to 180C
In a bowl, combine the eggs, ham hock, chives and courgettes
In the meantime, fry a chopped red onion in a large glug of oil on medium heat until starting to get golden brown, add the garlic and the spices na dry for another minute and then pour into the courgette and egg mixture (this will start the cooking process and give it the wonderful texture a Frittata has)
Pour more oil into the pan and return the mixture back
Stir the mixture gently until it sits easily in the pan and is even
Leave to set and lightly brown on the sides and the bottom, dollop a few teaspoon full of the mascarpone, sprinkle with freshly grated pepper on top and pop into the preheated oven for 15-20 minutes or until there is no wobble
Enjoy hot or cold, with a fresh side salad
