This is a Thai version of a doughnut and is a very popular street food.

Makes 20-25 doughnuts

You will need:

  • 360g plain flour
  • 1 teaspoon of sugar
  • 1 teaspoon of baking powder
  • 1/4 teaspoon of bicarb
  • Pinch of salt
  • 240ml water

Add the sugar, baking powder, bicarb and salt to the water and stir until dissolved
Pour into the flour along with the oil, combine
Leave to rest at room temperature for 3 hours
Cut into small chunks and roll these into long thin sausage shapes
Cut 3 inches of at a time, fold in the middle and twist around each other
Deep fry at 180C until golden brown and risen to the surface (test the first one, making sure it’s cooked all the way through)
Serve plain, with sugar, honey, chocolate or condensed milk
