This is a simple recipe for a Summer salad. It relies on the combinations of simple, beautiful flavours, so buying quality ingredients is a pre-requisite. We recommend you explore your local green grocers and farm shops. Visiting these places you almost always find some real treats.
Mixture of salad leaves (rocket, watercress and lambs lettuce)
Chilli oil (we use Fussels Rapeseed Chilli oil)
Thai Basil (optional, but does add a wonderfully intense flavour)
Drizzle the peaches with the chilli oil and cook in a hot pan or a griddle until starting to char
Arrange the leaves, basil, ham, peaches and cheese on a plate
Drizzle with chilli oil and the vinegar
