This is flavoursome Mulled wine inspired by my Danish relatives…

You will need:

500ml of wine – no need to get anything too expensive or special, but make sure it is still a tasty wine
400ml water
1 slice of fresh ginger
10 cardamom cloves
5 cloves
2 star anise
1 cinnamon quill
1 orange, sliced
Handful of raisins
4 dreid figs
Handful of flaked almonds
1 tablespoon of rose petals
1 teaspoon of vanilla extract
30g muscavado sugar
Port or brandy to taste

Pour the wine and water into a large sauce pan and add all the ingredients apart from the brandy
Gently heat through without boiling (you do not want to boil of the alcohol)
Keep on the heat for 45 minutes and taste – add sugar if you would like
Strain the wine and add the brandy or port – ENJOY!
