This delicious and colourful salad is a great way to eat your homemade (or shop bought) mozzarella.

Ingredients
Rocket and walnut pesto
1 ball mozzarella
The seeds of one pomegranate

For the pesto
Handful of walnuts, toasted
4 Brazil nuts
2 cloves of garlic
200g rocket
50ml extra Virgin olive oil
Handful of freshly grated Parmesan
Lemon juice to taste

Blitz the nuts, Parmesan and garlic
Add rocket and blitz quickly
Whilst the motor is running add the oil (more for a looser consistency)
Season with salt, pepper and lemon juice to taste

To assemble
Tear the mozzarella and pop on a platter
Drizzle pesto over
Scatter with pomegranate seeds
