This is a dinner that takes no time to prep, but is delicious, nutritious and will keep your family and friends happy! We have put together a lovely 2 course dinner for you to try out tonight.

Beetroot Speltoto

You need (serves 4 and a leftover packed lunch!):

500g spelt

3 grated raw beetroots

1 tsp salt

1 tablespoon of soya sauce

1 tablespoon of garam masala

1 heaped teaspoon of smoked paprika

4 sprigs of Rosemary

1 teaspoon of dried oregano

Cover the above ingredients thoroughly with cold water and simmer until the spelt is cooked

Add the below once the speltoto has been cooked and any extra liquid has been discarded

Zest of 1 lemon

1 feta, crumbled

2 tablespoons of chopped parsley leaves

Parmesan to taste

Chocolate and cherry ice-cream with peanut caramel sauce

You need (serves 4)

For the ice cream:

3 frozen bananas

150g frozen cherries

1tsp vanilla extract

1 tablespoons maple syrup

2 tablespoons of cocoa powder

1 tsp Maca powder (optional)

Blend all the above – add water if the mixture is not getting smooth

For the sauce: combine 1 teaspoon of crunchy peanut butter with 2 tablespoons of maple syrup

We served the ice cream topped with the sauce, goji berries, cocoa nibs and pistachios
