This is a delicious dessert. It is very light and so suitable to have after a heavy meal.

For the crumble:

50g almonds

1 teaspoon of cinnamon

large pinch of ground cloves

50g walnuts

1 small apple, quartered and cored (don’t peel though – skin on an apple is full of fibre)

5 dates

Handful of raisins

50g oats (gluten free)

Blend all the above (apart from the oats) until combined, but not too fine

Add the oats and combine by hand

For the Maple cream :

200g Cashews (SOAKED over night)

100ml apple juice

1 teaspoon of cinnamon

30ml maple syrup

Blend all the above and keep in the fridge

To assemble:

Slice you pear, top with the crumble and drizzle with the cream!
