This is a very simple recipe for a warming soup. It also contains vegetables which aid good digestion and even detox! The recipe below serves 2 people for a light lunch.

You need:

1 large sweet potato, cut into bite sized chunks

1 pear, cut into bite sized chunks

2 handfuls of spinach leaves

1 small onion, finely chopped

1 garlic clove, finely sliced

pinch of chilli

1 teaspoon garam masala

250ml vegetable stock

 

Heat a small glug of oil in a pan and fry the onion until it’s starting to turn golden brown, adding a large pinch of salt

Add the garlic and spices and heat through for about a minute

Add the potato, pear and stock

Cook until the potato is softened and starting to fall apart (roughly 25 minutes)

Pour into a blender and top with the spinach

Blend until smooth – Enjoy!
