Sweet potato or pumpkin are wonderful to cook with in the autumn and winter months as they bring bright colours to your table.  This dish is packed with lots of flavour, sweetness and textures. We made ours as ‘Halusky’, which is an Eastern European dish where you push the dough through a sieve with large holes. You can of course  just roll the the dough into big gnocchi or pipe straight into the water.

Halusky sieve

You will need:
500g cooked sweet potatoes, mashed
150g plain flour
1 egg
1 tablespoon of grated Parmesan
Salt
For the sauce:
50g butter
1 tablespoon of torn sage leaves
1 teaspoon of maple syrup
1 teaspoon Lemon juice
2 Amaretti biscuits

For the gnocchi- add flour, eggs, Parmesan and salt to the potatoes, combine
Knead until you get a smooth dough, adding more flour if necessary
Roll into little finger shapes and set aside (or roll into little balls)
Bring a pan of salted water to boil
Place gnocchi into the boiling water and boil until they come to the surface (about 2 minutes)
For the sauce, melt the butter with the maple syrup and keep on the heat until starting to turn golden brown, add the sage leaves and cook them for 30 seconds
Add the lemon juice and combine with the cooked gnocchi, place on a plate and scatter with crushed Amaretti biscuits
