Tempura is an amazingly versatile batter. You can deep fry an amazing array of vegetables, seafood even use it for Fish and chips. Once the vegetables or seafood has been fried, you need to serve this straight away. The batter will however keep for a couple of hours in the fridge.

You will need:

Prawns, vegetables

Equal amount of corn flour and plain flour Ice cold sparkling mineral water

You can also add spices to the batter: a teaspoon of Garama masala or turmeric, cumin, chilli

Mix the flours together

Add water in gradually until desired consistency has been reached (single cream consistency for canap├ęs, double cream for fish and chips), test this by frying a piece of vegetable, until nice and crispy (not thick and doughy)

Fry the rest and serve immediately with dips
