Aguas fresca (Spanish “fresh waters”) is traditionally a blend of fruits, cereals or seeds, sugar and water to make refreshingly light non-alcoholic beverage. They are widely available in Mexico from street vendors. They are also easy to make at home.

Serves 2

You will need:
1 mini melon or half a large one, flesh scooped out
1 hibiscus tea bag
200ml water
Handful of fresh summer berries
1 teaspoon of honey/sugar (optional)
4 sprigs of mint – leaves only
Juice from 1/2 lime
2 tablespoons chia seeds

Add the teabag into the water and leave to infuse for 30 minutes to an hour, the remove
Add all the ingredients into a blender and process until smooth
Taste and add sweetener and/or lime juice until you like the flavour
Pour over ice and enjoy!
