This is a vegetarian and vegan setting agent obtained from algae.¬†Agar-agar is approximately 80% fiber, so it can serve as an intestinal regulator. It contains many minerals (Calcium, iodine, etc.) and helps to lower the levels of cholesterol in blood. It is tasteless, which makes it suitable in savoury as well as sweet dishes. It is used instead of gelatine (which is not vegetarian), it sets much faster, even at room temperature, but the finished product isn’t as creamy and has a slightly crumbly texture, which might put some diners off.
