Eggs are wonderfully nutritious as they are high in protein, they also contain a plethora of vitamins and minerals, including A and D (essential for healthy skin, teeth and bones) and a range of B vitamins, which boost the immune system and energy levels. Most importantly, they are amazingly versatile:
– Fry and serve on toast with avocado and chilli, with ham and eggs or on a pizza
– Poach and serve with parma ham and rocket on toast, carbonara or on a risotto
– Boil and serve with marmite soldiers (a really good bread, butter and marmite makes for the ultimate treat)!!
– Turn into a frittata or simply scramble with mushrooms, tomatoes or cheese
– Omelette is always a good option!
