A cereal grain and staple food around the world. Rice is an important component in many regional cuisines and provides over a fifth of calories consumed by humans worldwide. It is generally used in cooking and not in baking (with other cereal grains such as wheat, this is reversed). Different species of rice are prized for their individual characteristics, although its high starch content is often crucial in creating the desired effect. Typical rice dishes include bhaat, bibimbap, congee, paella and risotto.
