This is delicious canapé, but can also be served as a starter – just serve 2-3 whole ones.Figs are an incredibly sensuous fruit, fit even for Cleopatra.

6 figs, cut into quarters
Small mozzarella balls (bocconcini), quartered
Parma ham
Salad leaves
Pesto

Preheat the oven to 200C
Push the mozzarella into the fig
Wrap in a half of parma ham
Bake for for 6-8 minutes until the ham is crisp
Serve drizzled with the pesto
To make your own pesto:
Combine 2 sprigs of basil, a handful of pine nuts and grated parmesan in a blender and pulse whilst pouring in 100ml olive oil. Season with salt and lemon juice to taste.
