Tortillas are a great way to use up your leftover turkey. Here is a recipe for home-made tortillas and guacamole. Serve with fresh herbs, chopped mango, red onion or chilli (whatever you might have at hand). A little splash of hot or even BBQ sauce on the turkey chunks is also a great idea.

Tortilla:
200g plain flour
1/2 tablespoons rapeseedTacos oil
1/2 teaspoons baking powder
1/4 teaspoon salt
Pinch of smoked paprika
1/2 teaspoon chopped fresh herbs (coriander, chives, parsley)
Large pinch of chia seeds (goes well with meat)/ cocoa nibs, crushed (goes well with fish)
100ml boiling water

Mix together the flour, baking powder, spices and herbs, seeds and salt in large bowl
Mix in the oil
Add water slowly, mixing with your hands to make a soft dough
Knead a few minutes on floured surface until smooth and elastic. Pour a little oil on the top, put back in the bowl and let rest, covered for 10 minutes
Divide into small balls the size of golf balls and proceed to roll out into size and thickness you like
Cook in dry heavy frying pan until top is slightly bubbly then turning on opposite side for a minute or two. Keep stacked and warm inside a clean tea towel.

Guacamole:
4 red chillies, finely chopped
Bunch coriander, chopped
2 large tomatoes, finely chopped
Salt, to taste
1 small red onion, finely chopped
½ lime, juice only
3 ripe avocados

In a pestle and mortar, pound the chillies, coriander, tomatoes, salt and onion to a fine paste.
Add a little water and lime juice to make a looser mixture. Mash in the avocados.
