Bourbon BBQ Sauce Easy

This home made BBQ sauce can bring so much flavour to home made burgers, pulled pork or ribs!

Sauce:

  • 4 tablespoons of cooking oil
  • 1 small white onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 teaspoon of fresh ginger, finely chopped
  • 250ml ketchup
  • 100ml cider vinegar
  • 200ml water
  • 50ml bourbon
  • 2 tablespoons hot sauce
  • 2 tablespoons of honey
  • 1/2 teaspoon of dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon of ground cumin
  • Large pinch of cayenne pepper
  • 1 bay leaf
  • 1 teaspoon of salt

Ribs:

  • 2 racks of baby pork ribs
  • 500ml ginger beer

Method

Preheat the oil in a large saucepan to a medium high heat.

Add the onion to the pan with the salt and fry until starting to turn golden.

Add the garlic, ginger, spices and herbs.

Cook for another minute.

Add the bourbon, ketchup, vinegar, hot sauce, honey and water.

Simmer for 20 minutes on low heat.

Remove the bay leaf, blend and keep in the fridge.

 

For the ribs:

Preheat the oven to 160C

Place the ribs in a baking tray, we are looking for a snug fit

Pour the beer over and cover with foil

Place in the oven and cook for 2-3 hours until the ribs are tender and falling apart

Once cooled, remove from the cooking liquid, dry on paper towel and smother in a few spoonfuls of the sauce

Leave to marinate for at least an hour or in the fridge overnight.

The following day – either BBQ them or cook in a very hot oven for 20 minutes!
