Chocolate and cherry cake

Chocolate and cherry is a wonderful flavour combination, but add thyme and you have yourself a real treat!

Serves 4-6

 

Ingredients

  • For the cake:
  • 85g unsalted butter
  • 85g caster sugar
  • 60g self-raising flour
  • 28g cocoa powder
  • 1 egg and 1 yolk, beaten
  • Pinch of salt
  • Large handful of chopped fresh, canned or even dried cherries (pitted)
  • 2 tablespoons of cherry kirsch or brandy
  • Thyme creme fraiche:
  • 200g creme fraiche
  • 1 teaspoon of chopped thyme leaves

Method

For the chocolate cake:
Cream the butter and sugar together with a handheld whisk and light and fluffy
Add the brandy and salt
Combine the cocoa powder with the flour
Start adding the eggs and flour gradually
Fold in the last bit of flour
Add the cherries
Add a little more brandy if the mixture is too thick
Pour into a lined tray and bake for 35-40 minutes or until the top has cracked and when a skewer is inserted, it comes out clean
Leave to cool and cut into individual portions

For the thyme creme fraiche:
Simply combine the cream with the thyme and serve on top of the cake
