Pork and apricot stuffing balls
These easy to make pork balls are delicious and look the part!
Ingredients
- 250g pork mince
- 1 tablespoon of chopped sage leaves
- 50g of roughly chopped dried apricots
- 1/2 teaspoon of salt
- 1/2 teaspoon of mustard powder
- 1/4 teaspoon of freshly ground pepper
- 12 strips of streaky bacon
Method
Preheat the oven to 200C
Thoroughly combine all the ingredients in a bowl (apart from the bacon)
Shape into 6 balls and wrap each in 2 strips of bacon in a cross shape, with the ends meeting underneath
Place each ball in a muffin tray, with the bacon ends at the bottom
Bake for 20-25 minutes or until cooked (a skewer inserted into the centre should come out piping hot or a food thermometer reads 70C)
