Rum and apple jelly

This lovely jelly for adults is also one of your five-a-day!
Makes 30-40 cubes


  • 500ml of apple juice
  • Teaspoon of ground cinnamon
  • 100ml dark rum
  • 10 leaves of gelatine
  • 50g desiccated coconut


Warm the apple juice in a saucepan with the cinnamon
Soak the gelatine in cold water for 5 minutes
Pour the rum into the apple juice and add the gelatine
Make sure the gelatine has dissolved
Line a small tray with cling film and pour the juice in and set the fridge for at least 3 hours
Once set, cut into cubes, roll in desiccated coconut and serve
