This recipe makes 4 burgers

Burger

  • 2 salmon fillets
  • 70g brown shrimp
  • 1 tablespoon of fresh dill, chopped
  • 1 teaspoon of tarragon leaves, chopped
  • Zest of 1 lime
  • 1/2 - 1 fresh red chilli, finely chopped
  • 2 spring onions, sliced
  • 1/2 teaspoon of dijon
  • 1/2 teaspoon of fresh ginger, grated
  • 4 sundried tomatoes, finely sliced
  • tablespoons of quinoa crispies

Chips

  • 2 large sweet potatoes (orange or purple)
  • 1 tablespoon of oil
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of smoked paprika
  • Serve with:
  • Guacamayo
  • Ciabatta

Method

Preheat the oven to 200C
Finely chop or blend the salmon fillets
Add the other ingredients and combine throughly
Shape into 4 patties and dip the bottom and top int the crispies
Place on a baking tray lined with baking parchment
Bake for 15-20 minutes until the fish is cooked through (63C)
For the chips:
Slice the potatoes into sticks/chips
Coat them in the oil, salt and sprinkle with the smoked paprika
Bake in a hot oven for 40-50 minutes until the outside is nice and cripsy and the inside is soft
