Mussels II

Today we’re taking another look at mussels; specifically an alternative way of preparing them which we think is so utterly delicious, we’re amazed that it’s not more wide spread – deep fried mussels.

You will need:
1kg live mussels
100g plain flour
25g of tapioca flour (optional – helps add crunch)
1 tsp carrot powder
1/2tsp turmeric
1/2 tsp garlic powder
1 tsp garam masala
1/2tsp sumac

Steam the mussels for no more than 2 minutes and remove from their shells
Dredge the mussels in flour and the spices
Heat your oil to 190C
Always take care when deep frying. Use a tall pan no more than half full of oil and always have the lid to hand. Heat slowly and never leave unattended.
Should you need to extinguish a fire, just use the lid and NEVER pour water onto it.
Get the mussels in and fry for 1 minute until golden brown,then get them out and onto a clean paper towel, and season with salt
Serve immediately
