Home made fresh pasta is unbeatable and surprisingly simple to make. The process is also quite therapeutic.
You will need:
200g ‘00’ flour
1 teaspoon of olive oil
To make by hand:
Place the flour onto the work surface, make a well and pop the eggs and oil in
Slowly combine with one hand, knead until combined and rest for 20 minutes outside the fridge or up to 24 hours in the fridge
Roll as thin as you can and cut into desired shapes
Boil in salted water for 2 minutes lift out and serve
To make your pesto:
Combine 2 sprigs of basil, a handful of pine nuts and grated parmesan in a blender and pulse whilst pouring in 100ml olive oil. Season with salt and lemon juice to taste.
