Shortbread

These biscuits are amongst the most scrumptious of them all. Here is the ‘stock recipe’. You can add extra flavour by adding 1 tablespoon of both lemon and thyme, 1 tablespoon of lavender, handful of chocolate chips or dried fruit.

You will need:
125g butter
50g caster sugar
175g flour

Makes 12-15

Rub the sugar into the butter for 1 minute
Combine with an electric whisk
Add the flour and keep whisking
Bring together, roll into a log, wrap and chill in the fridge for 20-30 minutes
Preheat the oven to 180C
Slice the log into biscuits
Spread on a baking tray lined with baking paper
Bake for 10 to 15 minutes, or until the edges have turned golden brown
Cool on a wire rack
