These flavoursome Samosas work well as a starter, main course or as canapés with drinks- the size is entirely up to you. If you serve these at a drinks party, the potato will line your stomach for the cocktails to come.

To make 6 starter size samosas you need:
4 potatoes, cubed (5mm cubes), cooked
1 leek, julienned (sliced into thin strips)
1/2 tablespoon of curry powder
pinch of chilli flakes (or as much as you can handle)
1 tablespoon of cream cheese
salt and pepper to taste
Pack of filo pastry
beaten egg
Chia seeds (or sesame seeds)

Preheat the oven to 200C
Pour a little olive oil into a frying pan and heat before adding the leeks with a large pinch of salt and the spices
Cook for 10 minutes unitl turning golden brown and tender (for extra indulgence, add a tablespoon of butter or ghee at the end)
Lay out the pastry and cut into long 5 cm thick strips
Place a large tablespoon of the tomato mixture into the middle and roll up
Place these on a baking sheet, brush with the beaten egg and sprinkle the seeds over
Bake for 10-15 minutes, until golden brown
