This refers to a loaf shaped dish (traditionally cooked in an earthenware dish) – it could be vegetarian, fish or meat based, even sweet, baked or steamed and usually gets served cold and sliced. It is similar to a pate, but with more chunky ingredients, often mixed with minced or creamed base to bind everything together. Terrines also refer to pressed and set dishes, often using gelatine, which don’t require any cooking, just time in the fridge.
