This is the liver and the pancreas of a lobster, found in the cavity of a lobster, which is soft, pale green when raw, but turns bright orange once cooked. It is a creamy delicacy and should not be discarded. It is derived from the Carib word tumale, which translates as ‘sauce of lobster liver’ or ‘ crab fat’.
