Tuna is a salt water fish of the Thunnini tribe, subgrouping of the mackerel family. The flesh is very meaty and therefore can stand up to rich flavours. It is easily obtainable canned, but also fresh as steaks or whole loin. They can be found in warmer waters weighing up to 700kg. The meat dries out quickly, so we recommend marinating and only frying briefly or gently simmering in a sauce. This fish is available all year round, but is at it’s best between May and September.
