I really love this dessert. It is nice and easy and you can use any seasonal fruit or raisins soaked in armagnac for t least 2 hours, which is a great wintery dessert. If you want to make this even more decadent, you can serve some vanilla ice-cream with it. This will melt on top of the hot clafoutis and turn into a delicious mess…

(makes 3)

70g plain flour
2 eggs
25g golden caster sugar 100ml milk
80ml double cream
1 vanilla pod
400g blackberries
Pinch of salt

Preheat the oven to 200C
Scrape the seeds out of the vanilla pod and place both into a pan with themilk and cream and bring to boil
Turn off immediately
Remove the pod and leave to cool
Combine the flour, salt, eggs, milk and the sugar in a bowl and mix with aballoon whisk until you get smooth batter
Pour into a pretty baking dishes and scatter the blackberries over and bakeuntil golden brown (15- 20 minutes) without opening the oven
