Mediterranean Salad

This is a fresh and vibrant salad, packed with flavour.

Serves 2

  • 200g mixed salad leaves
  • 1 small cucumber
  • 100g tomatoes
  • 2 tablespoons of black olives
  • 1/2 small red onion
  • 1 teaspoon of fresh oregano leaves
  • 50g feta cheese
  • Dressing:
  • 2 tablespoons of extra virgin oil
  • 2 tablespoons of white wine vinegar
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of dried oregano
  • 1/4 teaspoon of freshly ground black pepper


Slice the onion thinly
Cut the cucumber into half and then slice
Cut the tomatoes into bite size chunks (if they are small, halves will do)
Slice the olives into neat circles
Combine the salad ingredients in a large bowl
Crumble the feta over the top
Whisk together the dressing ingredients and pour over the salad
