Barbecue oysters

Oysters are fantastic cooked on a barbecue. They retain their fresh sea flavours, but the meat firms up, making this a great dish for oyster sceptics and lovers alike.

Serves 2



  • 6 oysters
  • 50g unsalted butter, room temperature
  • Zest and juice of 1/2 lemon
  • 1 tablespoon of chopped dill
  • 1 tablespoon of chopped chives
  • Dash of Louisiana hot sauce


Simply place the oysters on a barbecue (or oven)preheated to 230C
They should open up within minutes (if they don’t – discard them)
To make the butter – combine all the ingredients and keep to one side
Once the oysters have opened by about 5 minutes, remove them from the barbecue, open fully and serve with butter and hot sauce
