Beetroot and quinoa burger

This is a wonderfully filling and tasty vegan burger. It’s packed with plant protein (from the beans and quinoa) and vegetables.

Burger Ingrediens

  • 1 can of butter beans
  • 150g cooked quinoa
  • 1 tablespoon Cajun spice seasoning
  • 1 carrot, grated
  • 1 small red beetroot (raw), grated
  • 1 teaspoon salt
  • 1 teaspoon smoked paprika
  • 2 garlic cloves

Serve with

  • Burger buns
  • 1 tin of cooked jackfruit
  • 4 tablespoons of BBQ sauce

Method

Preheat the oven to 180C
Start by mashing the beans in a bowl (or use a food processor for a finer finish, which will result in a more homogenous burger mix)
Mix in the other ingredients and shape into 4 patties
Heat a glug of oil to medium high in a large oven safe non-stick pan and gently place the burgers in the hot oil
Once it is browned, carefully flip the burgers
Fry for another 5 minutes and place into the oven in the pan
Bake for 10 minutes to heat them through and serve

For the jackfruit, once cooked, pull apart with a fork
Heat through in a pan with the BBQ sauce and serve on top of the burger
