This is a light side dish or starter.

Serves 2

Ingredients

  • 1 Cantaloupe
  • 1 tablespoon of black (or white) sesame seeds
  • 1 lime, juice and zest
  • 1 tablespoon of rapeseed or olive oil
  • 1 pinch of salt
  • Small pinch of chilli powder
  • 10 leaves of mint
  • 1 teaspoon of tarragon leaves

Method

Scoop the melon flesh out and slice thinly
Combine the oil, zest and juice from the lime, salt and chilli powder and pour over the melon
Finely slice the mint and tarragon leaves and stir through the salad, reserving a few for decoration
Leave to marinate at room temperature for 30 minutes
Serve decorated with the herbs and seeds
