Chilli sauce

Makes 1 large jar


  • 1 red onion
  • 3 whole peppers
  • 3 red chillies
  • 1 tablespoon of honey
  • 60ml red wine vinegar
  • 1 teaspoon of salt
  • 1 teaspoon of chipotle paste


Roughly chop all the ingredients
Preheat a tablespoon of rapeseed oil on a high heat in a large pan
Add the onion and salt
Keep stirring until the edges of the onions are starting to get golden brown
Add the chillies and peppers and cook for further 5 minutes
Pour in the vinegar, honey and chipotle paste
Lower the heat and cover the pan with a lid
Simmer for 20-25 minutes until peppers have complete softened
Blend and adjust seasoning and heat to taste
