These little tartlets are great, as the filling doesn’t require any further baking and they can be made well in advance.

You will need:

  • 4 small sweet pastry tart cases
  • 1 small pear, finely cubed
  • Small knob of butter
  • 150g mascarpone
  • 150g dark chocolate
  • 1 teaspoon of almond extract

Method

Melt the butter in a pan and add the pear cubes and cook until soft and golden, leave to cool
Melt the chocolate in a bowl set over a pan of simmering water
Pour into the mascarpone and combine
Add the extract and mix thoroughly until smooth
Add the pear cubes to the bottom of the pastry cases and spoon the chocolate ganache over them
Smooth and feel free to decorate with pear crisps and melted chocolate
