This salad works perfectly as a side dish or a light starter.

Serves 2-4

 

Ingredients

  • 1 green and 1 yellow courgette, cut into ribbons using a peeler
  • 300g cooked quinoa
  • 100 fresh broad beans
  • 100g fresh peas
  • 150g crumbled feta
  • 2 tablespoons of freshly chopped mint
  • Zest from 1 lemon
  • Dressing:
  • Juice from 1 lemon
  • 2 tablespoons of oil (chilli rapeseed oil would work beautifully)
  • 1 teaspoon of honey or maple syrup
  • Large pinch of salt

Method

Make the dressing by thoroughly combining the ingredients
Place the salad ingredients (apart from feta and mint) into a bowl and pour the dressing over and massage in
Leave to stand for 30 minutes before stirring through the feta and mint
Serve topped with other fresh herbs, such as chives, red amaranth or just more mint
