Egg Fried Rice
This is a speedy dish. If you want to turn it into a more substantial dish, you can add meat or seafood as well.
Serves 2 as a meal or 4 as a side dish.
- 500g cooked rice
- 1 tablespoon of sesame oil
- 3 eggs, lightly beaten
- 1/2 white onion, roughly chopped
- 150g frozen peas
- 2 handfuls of bean sprouts
- 2 tablespoons of soy sauce
- 1 tablespoon of Shaoxing wine
- 4 spring onions, chopped
Preheat the oil in a large wok
Add the onion and fry on a medium heat until translucent
Add the egg and stir gently, just to break up the egg
Once it is starting to cook and break up, add the rice
Turn up the heat to medium-high and keep stirring occasionally
Add the peas, bean sprouts and sauces until the peas is thawed
Taste and add more soy sauce if needed
Add the spring onion and serve!
