Firecracker Pineapple

This is an amazingly easy dish to make, but the flavour combinations are simply sensational!

Serves 2



  • 1/2 pineapple, sliced thinly
  • 1 lime
  • Chilli powder (we use Kashmiri chilli, but whatever you have at home will work)
  • 1/2 teaspoon of ground black pepper
  • 1/4 salt
  • A few mint leaves, thinly sliced


Combine the pineapple with the salt, chilli and pepper
Try adding a little of he pepper and chilli at a time and taste – you might find that you would prefer a lot more heat or less
Add zest of the lime and squeeze the juice all over
Leave to marinate for 20 minutes or so (with longer marinating time, the heat will penetrate the pineapple further)
Arrange on a serving platter and scatter the chopped mint over and enjoy
