Fritto Misto

This is a great dish for sharing and can easily be scaled up or down to suit the number of guests.

Serves 2


  • 1 small squid cut into rings
  • 1 small cooking chorizo, cut into rings
  • 2 small courgettes, sliced into thick rings
  • 1 lemon, sliced thinly
  • 1 small fennel, sliced into thin slabs
  • 2 small handfuls of raw prawns
  • 150g plain flour combined with a large pinch of salt and pepper
  • For the batter:
  • 100g plain flour
  • 100ml white wine
  • 25ml sparkling water


Preheat a deep fat fryer to 190C or use a tall pan and fill half way up with oil (test by dropping a cube of bread into the oil and if it sizzles and turns golden within 15 seconds, it’s ready)
Combine the flour and wine for the batter ingredients, making sure there are no lumps and leave to stand for 20 minutes
Coat the ingredients in flour and salt mixture
Add the sparkling water to the batter ingredients and combine
Transfer your ingredients into the batter and coat
Fry for 3-4 minutes until everything is golden brown
Remove with a slotted spoon and and dry on a piece of kitchen paper and season with salt
Serve with Aioli
