Gazpacho

This is a beautifully refreshing soup – perfect for hot days.

Serves 2

Ingredients

  • 1 small red onion, finely chopped
  • 2 garlic cloves, finely sliced
  • 1 red pepper, deseeded and chopped
  • 1/2 small red chilli (or to taste)
  • 4 ripe tomatoes, chopped
  • 1 small cucumber, deseeded and chopped
  • 1 slice white bread, crusts removed and torn
  • 500ml passata
  • 300ml good quality vegetable stock
  • 5 tbsp olive oil
  • 4 tbsp red wine vinegar
  • Zest of 1 lime
  • 1 tsp honey
  • Herbs and a couple of slices of a carrot to decorate

Method

Blend the above, chill for a couple of hours and serve topped with the carrot and herbs
