Gazpacho
This is a beautifully refreshing soup – perfect for hot days.
Serves 2
Ingredients
- 1 small red onion, finely chopped
- 2 garlic cloves, finely sliced
- 1 red pepper, deseeded and chopped
- 1/2 small red chilli (or to taste)
- 4 ripe tomatoes, chopped
- 1 small cucumber, deseeded and chopped
- 1 slice white bread, crusts removed and torn
- 500ml passata
- 300ml good quality vegetable stock
- 5 tbsp olive oil
- 4 tbsp red wine vinegar
- Zest of 1 lime
- 1 tsp honey
- Herbs and a couple of slices of a carrot to decorate
Method
Blend the above, chill for a couple of hours and serve topped with the carrot and herbs
